Since my last post I have moved home, moved up to school and have officially started my 4th and final year at Michigan State. So what do I decide to do on my second Saturday here? Drink and make cupcakes!
So I decided to make some delicious oreo cupcakes! With an oreo bottom, oreos in the batter, and oreo buttercream it really is a delicious, oreo-y experience. Seriously, the chocolate cupcake is as delicious as ever – light, fluffy, moist, and now crunchy with oreo chunks. The Oreo on the bottom adds a pleasant surprise and the buttercream is delectable.
These have the roommate seal of approval =)
Oreo Surprise Cupcakes
Ingredients
- 1 cups sugar
- 3/4 + 1/8 cup flour
- 1/4 + 1/8 cup cocoa powder
- 1 teaspoons baking soda
- 1 teaspoons baking powder
- 1/2 teaspoon salt
- 1 eggs
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoons vanilla extract
- 1/2 cup hot coffee
- 18 whole oreos
- 1/4 - 1/3 cup crushed oreos
- 1 stick butter (1/2 cup)
- 1/4 cup oreos (completely crushed)
- 2-3 cups powdered sugar
- 2 tbsp milk
- 1 tsp vanilla extract
The Frosting
Instructions
- Preheat oven to 350F and line the cupcake tray, place a whole oreo in each liner
- Sift together the dry then mix in egg, milk, vegetable oil, and vanilla extract
- Add coffee and combine (will be very thin) then add in oreo crumbs
- Fill each liner 3/4 of the way full and bake for 16 minutes
- for the frosting cream the butter and slowly add the powdered sugar - once combined add the oreos vanilla and milk. Mix until well combined
- After cupcakes cool decorate as you wish! If you're going to pipe the frosting, make sure the oreos are crushed really really well
