Hard Apple Cider Cupcakes

Since turing 21 I have fallen in love with Hard Apple Cider. Normally, I just get Strongbow or Woodchuck but then I went out to eat with my father and ordered Angry Orchard which was brought to me with the glass rim dipped in cinnamon brown sugar. 100% my new favorite drink. So, I really wanted to replicate that in a cupcake. There are so few recipes out there for cider cupcakes though. Seriously, I found 2 hard cider recipes and 2 cider recipes. One cider recipe looked promising though, so I prayed it would work with my hard cider.

Hard-Apple-Cider-Cupcakes-1For this I used an apple cider cupcake recipe found here and substituted Crispin Natural Hard Apple Cider (I chose this cider because it tastes more like apples than various other hard ciders out there. Its apple taste is at the forefront and that’s the flavor I wanted to bring out). I was really worried at first because when I added the cider to the butter/sugar mixture there was a weird curdling reaction and I was pretty sure everything was going to end horribly, but I added the wet mixture to the dry and everything mostly smoothed out and the batter just smelled delicious.

The end result was a cake with an amazing apple flavor, a delightful moist, fluffy, consistency, and an apartment that smelled like fall. The decision to use cinnamon brown sugar frosting was brilliant because it compliments these cupcakes so well. As we all stood around eating these we decided they were probably the best cupcakes yet. I would make these again in a heartbeat.

Hard Apple Cider Cupcakes

Yield: 12

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cup hard apple cider (or normal apple cider. I used Crispin blue line)
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • For Frosting:
  • 1 stick butter
  • 1.5 cups powdered sugar
  • 3/4 cup brown sugar
  • 2 tbsp hard cider
  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 350F
  2. Cream butter and sugar for about 5 minutes, then add egg and vanilla
  3. Mix in apple cider (for me this resulted in a weird curdling effect and I couldn't actually combine anything with the cider. Don't worry about it)
  4. In a different bowl, sift together the dry ingredients and create a well in the middle
  5. Pour the wet mixture into the dry and combine - it's okay if it's still contains some little lumps but it should also take on a creamier consistency.
  6. Fill liners 3/4 of the way full and bake for 16 minutes
  7. To make the frosting cream the butter and brown sugar together
  8. Slowly add the powdered sugar, alternating with wet ingredients to make combining easier
  9. Don't forget to add the cinnamon
  10. Wait for cupcakes to cool and frost away!
