Every post lately has started with “Welp, it’s been a while,” and it yet again, it has been a while. Quite a bit has happened since May. I got my first real life, with benefits, grown up, full time job and moved from the lovely state of Michigan to Memphis, Tennessee. It’s been stressful and huge, but now that I’m moved and somewhat settled I should be baking and posting a bit more.
For my new home and roommates first introduction to my baking I decided to make Cherry Coke Float cupcakes, which I have been meaning to make for a long time. They had a few knit-picky issues – I found the cakes a little denser than I normally like and I put the whipped cream on too early and it it was melted within 5 minutes. But all in all they were delicious.
Ingredients
- 1 1/2 Cups flour
- 3/4 Cup sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1/2 Cup milk
- 2 tsp vanilla
- 1/2 cup unsalted butter
- 3 Tbs cocoa powder
- 1 Cup Cherry Coke
- 2 tbsp maraschino cherry syrup
- 24 maraschino cherries
- whipped cream frosting
- ice-cream chocolate shell
Instructions
- Preheat the oven to 350 F.
- In a bowl, combine the flour, sugar, baking soda, and salt. Beat the egg, milk, and vanilla in a second bowl. In a saucepan, boil the Coca-Cola, and cherry syrup gently for five minutes. Melt in the butter and cocoa powder.
- Pour into the dry ingredients, stir well with a wooden spoon, and then add the liquid ingredients, beating until everything is blended.
- Pour into the cupcake pans and push a cherry into the center of each cupcake. Bake for 15 minutes or until a cake tester comes out clean.
- When cool frost with whipped cream. Drizzle on chocolate glaze and top with a maraschino cherry.
