I would like to apologize for the mess this site has been in over the last week. I’ve been messing with how to get it to go faster and how to properly make it a food blog instead of just a standard blog. But now that my new layout is up it should be set! I made these muffins twice. The first time I screwed it up royally and they were super dry and dense. These are pretty good – but I definitely stuffed too much fruit in there so they couldn’t rise. I still think they’re really good though. The chunks of fruit are the best part. The whole thing probably would have been the best part if I used less fruit BUT what can you do? I’ll take a bunch of fruit chunks over a super light muffin any day.

If you prefer a light, moist muffin then just use less fruit and everything will be dandy. If you prefer a dense, unrisen.. unrised… whatever… muffin packed with delicious fruit, have at it.

Apple Pear Muffins

Yield: 12

Ingredients

  • 1/4 cup unsalted butter, softened
  • 1/2 cup sugar
  • 3/4 cup Apple Sauce
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 2 cup flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. chinese five spice powder (substitute apple pie spice or cinnamon)
  • 1 large ripe pear (I also added 3/4 of an apple)

Instructions

  1. Preheat the oven to 400F
  2. Using an electric mixer, beat the butter and sugar together until the butter is thoroughly mixed in, then add the apple sauce, eggs and vanilla. Mix until smooth. Add the salt, baking powder and five spice, then slowly add in the flour until just combined.
  3. Dice the pear and apple into small 1/4 inch chunks and fold into the mixture. Then scoop the batter evenly into the prepared muffin tins.
  4. Bake for 14-20 minutes until the tops are dome-shaped and a toothpick inserted into the center comes out clean. Cool for 3-5 minutes before removing from the muffin tin.
