If you’re anything like me, you love artichokes. These things aren’t the cheapest – I could get a bunch of kale, a bunch of spinach, and a bunch of collard greens all for the same price as one can of artichoke hearts… or just one artichoke out of the produce section. Still I find myself obsessed with this delicious, healthy vegetable.
Unfortunately, these are most commonly used in spinach artichoke dip. Don’t get me wrong, I love spinach artichoke dip, but it’s kind of amazing how we can take these two really healthy foods and turn them into such an unhealthy dip, and then keep that unhealthiness in so many recipes. So without further ado, I give you 15 artichoke recipes (and not all of them are spinach artichoke!)
Crispy Artichoke Hearts with Horseradish Aioli
Simple, delicious, healthier appetizer option than spinach artichoke dip. Did I mention simple? All the time is spent waiting for the oven and chilling.

For everyone who can’t get away from the spinach artichoke dip.. here you go. It’s delicious and made in a slow cooker so you can be lazy!
Spinach & Artichoke Wonderpot
I once made this for myself and ended up eating it for four days. I didn’t hate it at any point. Unlike spinach artichoke dip, this isn’t smothered in cheese. It’s flavored by pasta starches and the mushrooms add an amazing flavor. The recipe only calls for 4oz of spinach but I added an entire bag of frozen spinach (about 10oz) and it really helped bulk it up.
Spinach Artichoke Mac and Cheese

Super Summer Detox Salad
Ignore the name of this because detoxes are unnecessary and silly. But I do make this salad all the time because it’s delicious. I like to change out the cherries for a few kalamata olives and add a little bit of feta cheese too.
