Cherry season continues! This time I took one out of the book of my favorite store in Michigan: Cherry Republic. They make these delicious “boomchunka” cookies. They’re oatmeal cookies with dried cherries and chocolate chunks. I happened to get a package of dried cherries mailed to me for my birthday so I wanted to replicate them in the form of these chocolate cherry oatmeal cookies.
These turned out deliciously. Also hearty. The ratio of oats to flour is 2:1 so they’re oaty, chocolatey, and cherry-y. They’re deliciously chewy, not super sweet and lovely.
They’re also so easy to toss together. It all goes into one bowl. After creaming the butter and sugar and tossing everything else in, you just fold in the chunks and cherries. Then you toss them in a fridge to firm up.
The stay nice and tall, don’t spread or flatten and they only bake for 10 minutes. 10 minutes!
They’re thick, and delicious and easy.
Ingredients
- 1 cup butter (room temperature)
- 1 1/4 cup dark brown sugar (packed)
- 2 large eggs
- 2 tsp vanilla
- 3 cups rolled oats
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 cup dark chocolate chip chunks
- 1 cup dried cherries
Instructions
- In a large bowl, mix together the butter and brown sugar until smooth. Add the eggs and vanilla and mix well. Stir in the rolled oats, baking soda, cinnamon and salt. Then stir in the flour until just combined. Fold in the chocolate and the cherries.
- Put the batter in the fridge to chill for at least 30 minutes (don't skip this unless you want flat cookies)
- Preheat the oven to 350F and spoon tablespoon sized balls onto a cookie sheet.
- Bake for 10 minutes and allow to cool on the sheet for at least 5 minutes before moving to a cooling rack.
