Halloween is basically the best time of the year, because it’s the most fall of all the holidays (some may say, but what about Thanksgiving??? But I feel like Halloween is the celebration of fall while Thanksgiving is a celebration of the end of fall). This weekend, for the first time in years, we decided to carve pumpkins. Which of course means plenty of pumpkin seeds.
Carving pumpkins was so much fun! and when we were finished we were left with just a mound of pumpkin guts. So naturally I spent the hour necessary to pick through the mound of pumpkin guts to pick out all the seeds and roast them up 4 ways.
Today’s offerings for you are Honey Roasted Pumpkin Seeds, Pumpkin Pie Pumpkin Seeds, Smoked Paprika Pumpkin Seeds, and Maple Bacon Pumpkin Seeds (yes these are as amazing as they sound)
The think I love about pumpkin seeds is it’s kind of just relaxing to sit there and separate them from the goop. Just play music or have your kids help you, and you can stop whenever you want. You get about a cup of seeds per pumpkin, so if you only want to pick through one, you get plenty of seeds.
Then you just soak the seeds in warm water to clean the gunk off and toss them in butter and spices then roast. Super easy
Plus super delicious. You can eat them straight, or put them on salads or in trail mix, whatever. Totally versatile.

Smoked Paprika Pumpkin Seeds
Maple Bacon Pumpkin Seeds
Ingredients
- 1 cup pumpkin seeds
- 1 tbsp bacon fat
- 1 tbsp maple syrup
- 1/2 tbsp brown sugar
- 1 cup pumpkin seeds
- 1 tbsp butter
- 1/4 tsp salt
- 1 tbsp honey
- 1/2 tbsp brown sugar
- 1 cup pumpkin seeds
- 1 tbsp butter
- 1/4 tsp salt
- 1/2 tbsp pumpkin pie spice
- 1 cup pumpkin seeds
- 1 tbsp butter
- 1/4 tsp salt
- 1/2 tbsp smoked paprika
Instructions
- Preheat your oven to 350F and line a baking sheet with parchment paper
- Clean and pat dry your pumpkin seeds
- Melt your fat and toss the pumpkin seeds in the fat to coat. Then add the spices and toss to evenly coat
- Spread your pumpkin seeds flat on the baking sheet (you don't want piles, you want them laying flat on the sheet)
- Bake 30-40 minutes until golden. Tossing every 10 to make sure they don't burn.
- Allow them to come to room temperature and enjoy!
