I have been on the hunt for a basic vanilla cake recipe. Every one I’ve tried has had the consistency of cornmeal, had a bland flavor, or has been too dry and crumbly. I’ve been wary of trying to find a new recipe because there doesn’t seem to just be a good staple vanilla anywhere. But I owe my roommate the cupcake of her choosing and the majority of the ones she suggested I make have a vanilla base. So before I promise her I’ll make her a delicious cupcake, I figured I should attempt to find a recipe that actually tastes good. Plus, everyone needs a staple vanilla cake.
Developing a verdict on this cake involved two of my roommates, my boyfriend and I standing around being very critical. They all know the importance of actually finding a good vanilla cake.
The verdict: The cake tastes delicious. I may add an additional tsp of vanilla or get vanilla greek yogurt with honey next time, but it’s definitely a taste I enjoyed. As for the consistency it’s dense and a little spongy but in a surprisingly pleasant way. I think it’s because they are so moist that it just works.
Additionally: If you leave them sitting out over night, they lose the spongy consistency and take on a lovely crumble but remain so incredibly moist. I would 100% make again
